Quick and easy mushroom soup Recipe

Here is the most delicious Mushroom Soup Recipe 


Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced (cremini, button, or a mix)
  • 4 cups vegetable broth
  • 1/2 cup of heavy cream or coconut cream
  • Salt and pepper to taste   
  • Fresh herbs for garnish (such as thyme, parsley, or chives)   

Method:

1-Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

2-Add the minced garlic and cook for another minute until fragrant.

3-Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown, about 8-10 minutes.   

4-Pour in the vegetable broth and bring to a simmer. Reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld.

5-Stir in the heavy cream or coconut cream and season with salt and pepper to taste. Heat through, but don't let it boil.

6-Ladle the soup into bowls and garnish with fresh herbs.   

Tips and Variations:

For a richer flavor: Use a mix of mushroom varieties, such as shiitake, portobello, and oyster mushrooms. You can also add a splash of sherry or Madeira wine to the soup.

For a thicker soup: Add a tablespoon of flour to the pot along with the garlic and cook for a minute before adding the mushrooms.

For a smoother soup: Use an immersion blender to blend the soup until it's creamy.

Add some texture: Top the soup with croutons, toasted nuts, or a dollop of sour cream or crème fraîche.

Make it vegan: Use vegetable broth and coconut cream instead of heavy cream.
