Here's a simple and delicious vegan pancake recipe:




Ingredients:

 1 cup all-purpose flour (or a gluten-free blend)
 2 tablespoons sugar (or maple syrup)
 2 teaspoons baking powder
 1/2 teaspoon salt
 1 cup plant-based milk (almond, soy, oat, etc.)
 2 tablespoons oil (vegetable, canola, or melted coconut oil)
 1 teaspoon vanilla extract (optional)
 Half Tablespoons of Spinach Powder

Method:

1-Combine Dry Ingredients: 
In a large bowl, whisk together the flour, sugar, baking powder, spinach powder and salt.

2-Combine Wet Ingredients: 
In a separate bowl, whisk together the plant-based milk, oil, and vanilla extract (if using).

3-Combine Wet and Dry: 
Pour the wet ingredients into the dry ingredients and whisk gently until just combined. *Don't overmix. A few lumps are okay. Overmixing will result in tough pancakes.

4-Cook the Pancakes:
Heat a lightly oiled griddle or frying pan over medium heat. You can test if the pan is hot enough by dropping a few drops of water on it; if they sizzle and evaporate quickly, it's ready.

5-Pour the Batter:
Pour 1/4 cup of batter onto the hot griddle for each pancake.

6-Flip the Pancakes:
Cook for about 2-3 minutes per side, or until golden brown. Flip when bubbles start to form on the surface and the edges look set.

7-Serve: 
Serve immediately with your favorite toppings.
